If there is a flavor combination that I love almost more than any other, it’s the magnificent duo of Coconut and Lime. (See this heavenly Coconut Lime Sheet Cake and Coconut Lime Zucchini Bread). The flavors are so bright and refreshing. Yum! I was cleaning out my pantry a few weeks ago and noticed a can of Coco Lopez Cream of Coconut (I generally use it to make this amazing Coconut Ice Cream), but decided to turn it into Frozen Coconut Limeade instead.
It was the right thing to do, my friends. The lime is so refreshing and the coconut flavor is creamy and fabulous. As an added bonus, it only requires 10 minutes of your time and takes only 4 ingredients (and one of them is ice!) Ha!
Hope some of you get a chance to try it!
Let me show you how to make it happen…
1. Fill your blender with 7 cups of ice.
2. Pour in 1 (12 ounce) container of frozen limeade concentrate (undiluted) and 1 (15 ounce) can of Coco Lopez Cream of Coconut. You can find the coconut mix at your local grocery store on the aisle with other drink mixers.
3. Add 1/2 tsp coconut extract. (You should be able to find this on the baking aisle).
4. Blend until smooth. Serve immediately and enjoy! Here’s the handy printable…

Is cream of coconut sweetened? I made this with a can of trader joe’s “coconut cream” (extra thick) and it turned out quite sour/bitter and I had to add a ton of sugar to make it edible. I’m a big fan of all your recipes, please keep them coming!

Coconut cream and cream of coconut are totally different products! Try cream of coconut and it’ll taste much better, lol.
