Strawberry Chocolate Chip Muffins

Good gracious, if you have some strawberries that need using up…please make these amazing muffins at your earliest convenience. If you don’t have any strawberries on the premises…please buy some at your earliest convenience and make the muffins, folks. They are worth the 10 minutes prep time, 15 minutes baking time and use of your precious strawberries and chocolate chips! I promise. 🙂

These muffins are super soft on the inside, are studded with little bits of chocolate and strawberries (a classic pair, if ever there was one!) are sweet, delicious and a fantastic way to round out your summer, my friends.

Strawberry Chocolate Chip Muffins

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 16 muffins

Ingredients

2 C flour
3/4 C sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 egg
2 tsp vanilla
1/3 C oil
1 C sour cream
2 Tb milk
1 1/4 C strawberries, chopped
1 1/4 C semi sweet chocolate chips

Instructions

1. Preheat your oven to 350 degrees.
2. Into a large mixing bowl place the flour, sugar, baking powder, baking soda and salt. Toss together with a fork to combine.
3. In a large glass measuring cup (or small mixing bowl) whisk together the egg, vanilla, oil, sour cream and milk.
4. Mix the wet ingredients with the dry, stirring just until combined. Don't be tempted to over mix, here.
5. Gently fold in the chocolate chips and strawberries.
6. Line your muffin tins with cupcake liners and spray with cooking spray.
7. Fill each liner 2/3 full with batter. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.

These are delicious! Took me at least the 10 minutes to slice and take the green off the strawberries…lol. My only issue is they didn’t rise. My ingredients are fresh, so I’m not sure what the problem was. I’m going to try them again, they’re that good! Hopefully they rise!
