Teriyaki Chicken and Bowtie Pasta Salad

Hello dear reader and thank you for dropping by today! I have an incredible recipe to share with you. I came by this heavenly salad recipe at a bridal shower this past summer. It received rave reviews from those in attendance. Everyone kept going back for more, saying “Wow, this is amazing!” and “I’ve never tasted anything like it!” and “What is in that dressing that makes it so good!”. We all loved it. I hunted down the recipe from my dear friend Kristine, and she was more than happy to share it with us. Pretty nice of her, right?

This fabulous salad is hearty and filling with and amazing teriyaki flavor. It’ may sound strange to feature “teriyaki” as the main flavor of a salad, but trust me friends, it’s not. It’s absolutely delicious!

Soy Vay Veri Veri Teriyaki Marinade and Sauce 42 oz. Bottle

I will mention, that it’s important to use this brand of Teriyaki Sauce in the recipe. I have tried it with a couple of other brands, and they were both much too salty. Stick with the Soy Vay Brand, my friends. It can be a little bit tricky to find, however it is available on Amazon. (What would we do without Amazon, seriously. Life changing!)

Teriyaki Chicken and Bowtie Pasta Salad

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 3 hours, 20 minutes

Yield: 12 servings

Ingredients

1 (16 ounce) package bowtie pasta
1 C Soy Vay Very Very Teriyaki Sauce (no substitutes)
1 (16 ounce) package spinach
3/4 C pine nuts, toasted
1 C craisins
1 C shredded rotisserie chicken (or grilled chicken)
Dressing:
1/2 C vegetable or canola oil
1/2 C Soy Vay Very Very Teriyaki Sauce
1/3 C rice vinegar
3 Tb sugar
1/2 tsp salt
1/4 tsp pepper

Instructions

1. Cook the pasta according to package directions. Pour 1 C of the teriyaki sauce over the noodles, cover and refrigerate for 3 hours or overnight.
2. Layer all of the salad ingredients together in a large bowl or platter.
3. Mix the dressing ingredients together in a glass measuring cup.
4. Just before you are ready to serve, pour the dressing over the salad and toss to combine.
Serve immediately and enjoy!

Does this recipe also include dried cranberries? It looks so from the photo, but I don’t see them in the ingredients.

Is that 13 cups of rice vinegar or
1/3 cup of rice vinegar? also curious about the cranberries. Thanks

Good gracious! Yes, you’ll only want 1/3 C vinegar. 😉 Thank you for catching that. You’ll also need 1 C craisins.

I have a hard time cooking bow tie pasta so that it’s evenly cooked; not crunchy at the crimp and floppy at the wings. What’s the best way to cook this particular pasta shape? (Usually when I see bow ties, I swap out a different shape!)

Hi Karen,
This is a great recipe to try your hand at cooking bowtie pasta. The noodles soak in the teriyaki sauce for many hours, helping the folded part of the pasta to soften up a bit. Give it a try!
