Tomato and Cucumber Salad

Welcome to you, dear reader! Thank you for dropping by today. I have a great, fresh, super simple salad recipe to share with you all today. My friend Julie introduced me to it a couple of weeks ago and I have made it several times since. It’s best made with garden fresh tomatoes, but you could use those you buy at the store as well, as long as they are grape tomatoes, cherry tomatoes or tomatoes on the vine. The better tasting the tomato, the better tasting this yummy salad will be. The cucumbers add a great crunch and take on the flavor of the vinaigrette. Hope some of you get a chance to try it! It’s great left in the fridge for several days at a time. Just pull it out and serve with lunch or dinner.

Tomato and Cucumber Salad

Prep Time: 10 minutes

Total Time: 1 hour, 10 minutes

Yield: 6 servings

Ingredients

3 large garden tomatoes, sliced into wedges
1 medium cucumber, cut into chunks
3 Tb onion, chopped
VINAIGRETTE:
1/3 C vinegar
2 Tb sugar
2 Tb olive oil
1/2 tsp salt
1/2 tsp pepper

Instructions

1. Place all the veggies in a medium sized bowl.
2. Mix the vinaigrette ingredients together in a glass measuring cup and pour over the veggies. Toss to combine.
3. Cover and chill for 1 hour before serving.

We make this every summer with garden cucumbers and garden tomatoes. Then use a heaping tablespoon of mayo and a few dashes vinegar, sea salt, pepper.

For me, 1/3 cup of vinegar and only 2 TB would be way to sour,also it needs some dill.

I made this when you posted it and we have made it every night since. We have lots of garden tomatoes and my husband is Italian and it’s what he grew up with. I didn’t even know. Sometimes we have added a little feta cheese with it but I actually love it as the recipe says. Yum. Thanks for posting.

I make this frequently. I have made it with apple cider vinegar, red wine vinegar, balsamic vinegar, and my favorite, white balsamic vinegar. Sometimes I mix 2 types of vinegar for a little different taste. My husband and I love it. I have also added mayo on occasion to the mix. Often eat tomatoes with mayo and vinegar or add bell peppers to the mix for more crunch and color

Just a tip. Add 1 tsp of molasses to keep the vinaigrette from separating if you make a bigger batch of the dressing. This works for any vinaigrette.
