Loaded with cheddar cheese, crispy bacon and green onions, these savory waffles are a fun twist on the classic waffle. We eat them with a runny egg over the top and a side of the Sweet Potato Hash I posted earlier this week.  They are light and fluffy on the inside with a nice crispy outside. My son Aaron would like me to tell you that they are “So, so good with syrup on top. Seriously.” There you have it. Savory and sweet, if that is your kind of thing. It’s Aaron’s. 😉

These fun waffles not only make a great breakfast but work fabulously well as a quick bread you can dip in soup (See, Cheese and Veggie Soup or Broccoli Cheese Soup, Hearty Beef Stew or even BBQ Chicken Chili). Cheddar and Bacon Waffles

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: about 12 medium sized waffles

Ingredients

2 C flour
4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
2 C milk
1/3 C canola oil
1/2 C cheddar cheese
3 Tb crumbled bacon
1 green onion, chopped

Instructions

1. Into a medium sized mixing bowl, place the flour, baking powder, baking soda and salt. Whisk it together to combine.
2. Plug in your waffle iron and allow it to heat up.
3. In a large glass measuring cup whisk together the eggs, milk and oil. Pour them into the dry ingredients and mix, just until combined.
4. Fold in the cheddar cheese, bacon and green onion.
5. Spray your waffle iron with cooking spray and scoop the batter evenly into it, making sure not to put too much in. You don't want it to come oozing out the sides ;). I generally leave about a 2 1/2 inch parameter between the batter and edge of the iron. This ends up making a little smaller waffle...but alleviates the possibility of a mess. Cook until crisp and golden brown.

  1. I used 1/4 cup of bacon bits and added a couple dashes each of pepper, onion powder, & garlic powder. The texture is light and fluffy, almost eggy like a fluffy omelette. Quite enjoyable. Thank you
