If you only try one new soup recipe this year, dear reader…please, make it this one. Not only is it truly SO EXCEEDINGLY SIMPLE to put together, but it tastes absolutely heavenly. Here are some direct quotes from several of my family members…

Beef Stroganoff Soup (Crock Pot)

Prep Time: 10 minutes

Cook Time: 6 hours, 30 minutes

Total Time: 6 hours, 40 minutes

Yield: 6 servings

Ingredients

1.5 pounds beef stew meat
2 packets Lipton Onion Soup Mix
64 ounces Beef Broth
2 Tb Worcestershire sauce
1 (8 ounce) package sliced mushrooms
1/2 (12 ounce) package egg noodles, cooked
1 C whipping cream
2 Tb cornstarch
3/4 C sour cream
2 Tb chopped fresh parsley (optional)

Instructions

1. Spray a large crock pot with cooking spray. Add the stew meat, broth, soup mix, mushrooms and Worcestershire sauce to it. Give everything a nice stir, cover and cook on low for 6 hours, or on high for 4 hours.
2. Cook the noodles according to package directions.
3. Mix the whipping cream and cornstarch until smooth. Add it and the sour cream to the crock pot. Stir well, cover and cook for an additional 30 minutes. The broth will thicken slightly.
4. Add the noodles and parsley and stir well.
Serve and enjoy!

  1. I made this soup for a large group, It was amazing! My only mistake was adding the noodles too early before serving. Despite the soggy noodles I had rave reviews.

  3. Sounds so yummy, I’m going to substitute Greek yogurt for cream and sour cream, because of my healthy food plan and add chick pea pasta! I’ll let you know how it works!
