The month of May can be so busy, am I right? All of the end-of-the-school-year-wrap-up events, spring sports, yard work, etc. It can keep families running from sun up to sun down! We have had an especially busy spring here at my house. My oldest two kids are engaged to be married (so exciting!) and wedding plans are in full force at the Eskelson home. I have to admit, we’ve resorted to a lot of quick and easy dinner recipes over the past few weeks and these 10 Minute Chicken Tacos have shown up repeatedly. I thought I would bring them along to share with all of you today, in case your dinner time routine is slim on time as well. I’m going to wager there more than a few of you that can appreciate that kind of thing. 😉
Made with rotisserie chicken (a staple around here), these chicken tacos are seasoned well with salsa, honey, lime and taco seasoning. I like to heat the tortillas on a hot skillet and then load them down with cheese, chicken, sour cream, lettuce and tomato. They really do make for a quick, filling meal in just 10 minutes. A blessing, yes?
