The month of May can be so busy, am I right? All of the end-of-the-school-year-wrap-up events, spring sports, yard work, etc. It can keep families running from sun up to sun down! We have had an especially busy spring here at my house. My oldest two kids are engaged to be married (so exciting!) and wedding plans are in full force at the Eskelson home. I have to admit, we’ve resorted to a lot of quick and easy dinner recipes over the past few weeks and these 10 Minute Chicken Tacos have shown up repeatedly. I thought I would bring them along to share with all of you today, in case your dinner time routine is slim on time as well. I’m going to wager there more than a few of you that can appreciate that kind of thing. 😉

Made with rotisserie chicken (a staple around here), these chicken tacos are seasoned well with salsa, honey, lime and taco seasoning. I like to heat the tortillas on a hot skillet and then load them down with cheese, chicken, sour cream, lettuce and tomato. They really do make for a quick, filling meal in just 10 minutes. A blessing, yes?

10 Minute Chicken Tacos

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 6-8 servings

Ingredients

CHICKEN:
3 C rotisserie chicken, chopped
1/2 C salsa
2 Tb honey
1 Tb lime juice (bottled is fine)
2 Tb Taco seasoning
salt and pepper
Corn or flour tortillas
olive oil or butter
sharp cheddar cheese
lettuce, tomatoes, sour cream, cilantro

Instructions

1. Place the chicken in a microwave safe container. Make sure you have chopped (or shredded) the chicken into small pieces.
2. In a separate bowl, whisk all other ingredients together. Pour over the top of the chicken and stir to combine.
3. Cover the container and microwave for 2 minutes, then stir. Repeat and stir several more times, until the chicken has heated through.
4. Heat a skillet up over medium high heat. Drizzle just a tiny bit of olive oil (or add just a touch of butter) into the pan. Add your tortillas and allow them to get golden brown on each side.
5. Sprinkle cheese over the tops of the hot tortillas. Add the chicken mixture and top with your favorite topping. I love sour cream, shredded lettuce, tomatoes and cilantro.
