Fiesta Ranch Green Salad, Fully Loaded

Happy soon to be summer, everyone! I have brought along a killer salad recipe to share with you all today that makes a fantastic (easy!) weeknight dinner, and also works wonderfully as a take-a long-dish to your next backyard bbq, pool party or general summertime get together of wonder. It may seem simple, but each time I take this yummy salad anywhere, I’m always asked for the recipe. I serve it in a large platter with a generous lip to hold all of the great toppings in place. Along the entire bottom of the dish I lay out some spring mix and then make piles of each topping around the perimeter. That way each person can dish what they individually enjoy.

For the dressing recipe I add a few ingredients to this fabulous Hidden Valley Fiesta Ranch mix. It’s super good!

These awesome Honey BBQ Twist Fritos give it a great crunch and pair so nicely with all of the fresh veggies. My little kids love it. My siblings love it. My adult kids love it. She’s a keeper, gang. Hope some of you get a chance to try it this summer.

Fiesta Ranch Green Salad, Fully Loaded

Prep Time: 20 minutes

Total Time: 20 minutes

Yield: 12 servings

Ingredients

SALAD:
10 cups Spring Mix (about half of a 16 ounce carton)
2 grilled chicken breasts, or rotisserie chicken
1 (15 ounce) can black beans, rinsed and drained
2 C frozen corn, thawed
2 C Mexican blend cheese
1 C cilantro, chopped
1 red bell pepper, sliced
1 orange pepper, sliced
1 C grated carrots
1/2 red onion, sliced
1 pint grape or cherry tomatos
2 C Honey BBQ Spiral Fritos
DRESSING:
1 (1.1 ounce) Hidden Valley Fiesta Ranch Mix
1 C mayonnaise (I used Best Foods, full fat)
1/3 C sour cream
1 C milk

Instructions

1. Grab a large salad platter with a generous lip. Lay the spring mix out evenly over the bottom.
2. Place each of the salad toppings in individual piles around the perimeter of the salad. The Honey BBQ Fritos should be added just before serving so they don't get too soft.
3. To make the dressing, place all ingredients into a small mixing bowl and blend together with an electric hand mixer.
4. Serve with a nice pair of tongs so guests can select their favorite toppings.
