Fast and Healthy Lunch Ideas (Apple Caprese Salad and Chic Pea Greek Salad)

Hello friends and welcome to a post about 2 fabulous, SUPER FAST and tremendously healthy lunch ideas. Both of these simple salads can be put together in minutes, keep well for several days in the fridge and taste absolutely fabulous. We have been eating clean at my house for many months now and these salads have turned into staples. I usually make several at a time and store them in single serving containers for easy access through the week. However, they taste so good you could make one large batch and take it to a gathering as well. Very, very tasty is what I am trying to communicate to you here. 🙂

I can’t say enough great things about this Apple Caprese Salad. The apple gives it a fabulous crunch and amazing sweetness to balance out the balsamic vinegar. Also…it’s sure pretty to look at! Something this dismal January needs, right? Bright colors and beautiful taste.

Apple Caprese Salad

Prep Time: 5 minutes

Yield: 1 serving

Ingredients

1 apple, diced
6 oz grape tomatoes, cut in half
3-4 fresh basil leaves, chopped
2 sticks string cheese, cut into bite sized pieces
balsamic vinegar (I use between 2-3 tsp)
salt and pepper
drizzle olive oil

Instructions

Mix all the ingredients in a bowl, serve and enjoy!

Notes

This little salad keeps super well in the fridge for several days and actually gets a little better each day.

CHIC PEA and TOMATO GREEK SALAD
Prep time: 5 minutes
Serving size: 1 serving

3 oz grape tomatoes, cut in half
3 oz cucumber, dices
3 oz chic peas, drained
1 oz feta cheese
green onion, chopped
drizzle olive oil
All purpose Greek seasoning
salt and pepper

Delicious looking and so beautiful! These are perfect recipes for the January detox from the holiday indulgences. I have checked out that Greek seasoning because I have heard many good things about it, but last I looked it had MSG in it. Do you know if you bottle currently shows that still?

Make Greek Seasoning at home

Makes 8 servings–9 calories per serving.

Ingredients
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons dried basil
2 teaspoons dried Greek oregano
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
1 teaspoon dried parsley
1 teaspoon dried rosemary, minced
1 teaspoon dried dill weed
1 teaspoon dried marjoram
1 teaspoon cornstarch
1/2 teaspoon ground thyme
1/2 teaspoon ground nutm

Mix salt, garlic powder, basil, oregano, cinnamon, black pepper, parsley, rosemary, dill, marjoram, cornstarch, thyme, and nutmeg in a bowl. Store in an airtight container. Alternately, blend spices in a spice grinder for a finer texture.

Cook’s Note:
Keeps for one year.
