Instant Pot Creamy Chicken Tacos

Hello there and welcome to a post highlighting perhaps the easiest chicken recipe you may ever make. This chicken turns out tender, creamy, full of flavor and is perfect to top a nice pile of tortilla chips, make into a big salad or to stuff into a warm tortilla. My daughter Anna developed this recipe several months ago and my family and I have been making it regularly since then. You can make it in the crock pot as well if you’re not an Instant Pot kind of person. 🙂

Instant Pot Creamy Chicken Tacos

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 8-10 servings

Ingredients

5 chicken breasts (can be frozen)
2 1/2 C salsa
3 Tb taco seasoning
2 Tb ranch dressing mix
2 (8 oz) packages cream cheese
Tortillas, chips, lettuce, tomato, onion, black beans, sour cream, guacamole, etc.

Instructions

1. Place the chicken in the bottom of your instant pot.
2. Mix the salsa, taco seasoning and ranch seasoning together in a glass measuring cup and pour the mixture over the top of the chicken,
3. Turn the instant pot to the high setting and then to cook for 25 minutes.
4. Allow the steam valve to release naturally.
5. Open the pot and remove about 1 C of the liquid.
6. Shred the chicken with two forks and add the cream cheese stirring well.
7. Place the lid back on the pot and allow the cream cheese to warm and become incorporated into the mix. Should only take about 10 minutes. No need to set the instant pot to cook again, the cream cheese will heat through nicely for you.
8. Serve on chips, on a tortilla or in a big salad.

Notes

To make in the crock pot, use all the same ingredients. Cook on high for 4 hours or on low for 7.

How would I convert this recipe to crock pot? I am thinking it would then need more liquid. Thanks.

Hi Lori,
Thanks for your question. You should be fine to make it in the crock pot with all the same ingredients. I would cook it on low for 7 hours or high for 4 hours. Best of luck to you!
