Total Time 1 hour
Servings 12 Rolls

Ingredients

  • 4 1/2 C flour divided
  • 1 1/2 tsp salt
  • 1 C milk
  • 1/2 C water
  • 1 Tb honey
  • 4 Tb butter
  • 1 egg yolk
  • 2 1/4 tsp yeast
  • 1 beaten egg
  • sesame seeds optional
  • poppy seeds optional

Instructions

  • 1. Preheat your oven to 170 degrees.
  • 2. Into your stand mixer, place 2 C flour and 1 1/2 tsp salt toss it together to combine.
  • 3. Into a large glass measuring cup place 1 C milk, 1/2 C water, 1 Tb honey and 4 Tb butter. Heat it in the microwave for 3 minutes. Notice from the picture, that the butter has started to melt. That's what you want. The liquid should be hot and the butter slightly melted.
  • 4. Pour the liquid into the mixer. Mix for 1 minute.
  • 5. Add 1 egg yolk and mix to combine.
  • 6. Add 2 1/4 (or 1 scant tablespoon) of yeast. (I used Active Dry Yeast).
  • 7. With the mixer on low, continue to add the remaining 2 1/2 cups of flour. You'll know you have enough when the dough pulls away from the side of the bowl. Once you have enough allow it to mix on medium speed for 5 minutes.
  • 8. Allow it to rest in the bowl for 5 minutes.
  • 9. Spray a large cookie sheet with cooking spray and place the dough in the center. Cut it into 4 equal parts. Then cut each of these into three equal parts, resulting in 12 fairly even pieces. Give or take a centimeter or two. :) Roll each piece into a round ball.
  • 10. Whisk an egg until nice and frothy and then brush the top and sides of each roll with it.
  • 11. Sprinkle sesame seed, or poppy seeds onto the tops and sides of the rolls. Or, you can just leave them plain. No worries.
  • 12. Pop them into the warm oven and allow them to rise until doubled in size. (Should only take about 25 minutes or so).
  • 13. Turn the heat to 400 degrees and bake for about 15 minutes or until the rolls are golden brown.
  • Like this! Yum! Remove them to a wire rack to cool, then slice and fill them with whatever sandwich ingredients you would like!
