This Healthy Cheesy Veggie Scramble with Bacon is an easy 15-minute breakfast made in one skillet! Loaded with eggs, crispy bacon, red pepper, red onion, zucchini, spinach, tomatoes and plenty of melty cheese, it’s a flavorful, protein-packed breakfast filled with fresh veggies.
5slicesprecooked baconYou can use raw bacon, if you choose. I just find it goes so much faster and produces less grease, by using the precooked variety.
2 Conion, bell pepper, zucchini, finely diced
12largeeggs
1/4 Cmilk
1/2 tspseasoned salt
1/4 tsp salt
1/4 tsppepper
1Cspinach, finely chopped
1medium sizedtomato, diced
5slicesSwiss cheese
Instructions
1. Grab your bacon and cut it into pieces with some sharp kitchen scissors. Dice up your onion, zucchini and bell pepper.
2. Place a medium sized skillet onto your stove top and heat it over medium high heat. Add the bacon and allow it to warm through and start to sizzle up a bit and release some of the bacon grease. Add your diced veggies and cook, stirring occasionally for about 5 minutes or until the veggies begin to wilt.
3. While the veggies and bacon cook, crack your eggs into a medium sized mixing bowl. Add the milk, seasoned salt, salt and pepper. Whisk until blended and slightly frothy.
4. Pour the egg mixture into your skillet and allow the eggs to cook, using a rubber spatula to move them around the pan so they don't burn to the bottom.
5. When the eggs are mostly cooked through (should still be slightly runny), add your chopped spinach and diced tomato and stir to combine.
6. Add the sliced cheese to the top of your eggs, turn off the heat and cover the pan. This will ensure that the cheese melts and the eggs completely cook, without everything getting overcooked.
