Ingredients

  • SUGAR COOKIE CRUST:
  • 1 C butter softened
  • 1 3/4 C sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 3/4 C flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • FROSTING:
  • 12 ounces cream cheese softened
  • 8 Tb butter softened
  • 1 tsp vanilla
  • 2 C powdered sugar
  • milk as needed
  • FRUIT:
  • strawberries raspberries, blueberries, kiwi

Instructions

  • 1. Preheat your oven to 350 degrees.
  • 2. Into your stand mixer place the butter and sugar. Cream together for 2-3 minutes.
  • 3. Add the eggs and vanilla and beat for an additional 2-3 minutes or until light and fluffy.
  • 4. In a separate bowl toss together the flour, baking powder and salt. Add these dry ingredients to the creamed mixture. Mix until combined.
  • 5. Spray a large sheet pan (mine is 11x16) with cooking spray and carefully press the dough into the pan. The dough is kind of sticky, so be aware. I ended up spraying my hands with cooking spray and using them to press the dough into the pan.
  • 6. Bake for 15-17 minutes, or until golden brown. Make sure not to over bake.
  • 7. Allow the pan to cool completely.
  • 8. To make the frosting, cream together the cream cheese and butter until smooth. Add the other ingredients and mix until silky. Add a bit of milk if it's too thick.
  • 9. Spread the frosting over the top of the cooled sugar cookie crust and layer with beautiful fruit slices.
