Laura’s Glazed Poppy Seed Bread
Time: 15 minutes prep + 45-55 minutes to bake
Yield: 2 loaves
Recipe from Real Mom Kitchen Cookbook
3 C flour
1 1/2 t salt
1 1/2 t baking powder
2 1/2 C sugar
3 eggs
1 1/2 C milk
1 1/2 t almond extract
1 1/2 t vanilla extract
1 1/2 t butter flavoring
1 C + 2 T canola oil
1/4 C poppy seeds
GLAZE:
3/4 C sugar
1/4 C freshly squeezed orange juice
1 1/2 t vanilla
1/2 t butter flavoring
1/2 t almond extract
1. Stir your flour, salt, baking powder and sugar together in a medium sized mixing bowl with a wire whisk.
Just look at those beautiful flavorings……
2. In a separate mixing bowl whisk up your eggs until they are nice and frothy. Add the milk, vanilla, almond extract, butter flavoring and oil.
Wisk it all together until its nicely combined.
3. Pour in your poppy seeds and give it another whisking to incorporate.
4. Pour the wet ingredients into the dry.
Using a wooden spoon, stir everything together just until combined. You don’t want a lot of flour clumps, but you don’t want to over mix here either.
5. Take a piece of parchment paper and trace the shape of the bottom of your pan onto it with a pencil. Fold the paper over and cut two pieces out, using the pencil tracing as a guide.
6. Place the cut paper into the bottom of your pans and spray it with cooking spray. It works best if you use a cooking spray that has flour in it. Baker’s Joy works like a charm. Pam Cooking Spray also has a cooking spray with added flour. Buy one…you won’t be sorry.
7. Pour the batter into your pans. Bake at 350 for 45-55 minutes or until a toothpick inserted comes out clean.
8. While the bread is baking, make the glaze. It’s super easy! Juice your orange into a small mixing bowl. Add all other ingredients and stir it well.
9. When your bread is done, remove it from the oven and let it rest for about 3 minutes. Run a knife around the edges of the pan and then carefully dump the bread out of the pans and onto a cooling rack. Place a large cookie sheet under your cooling rack.
10. Give your glaze a few stirs to be sure all ingredients are mixed together and then pour it over the top of your bread. Brush the glaze that falls onto the cookie sheet over the loaves. Let the bread sit for about 10 minutes to soak up the glaze. Then dig in my friend…..enjoy a little trip to heaven today!

This bread looks heavenly! Mmm…..maybe I'll have to make it this week! My favorite summer meal is probably anything with summer veggies. I love grilled corn and a barbecue or zucchini fries and a summer sandwich!

Wow, I'm feeling very out of the loop. I obviously haven't been paying attention to my Real mom kitchen info lately. So exciting that she has a book.
My favorite easy summertime meal – at least this week – is some black forest ham with a nice salad and either some quick mashed potatoes or my microwave mac n cheese. Quick, easy, cool, no oven involved. 🙂 (we didn't heat our ham.)

we often grill chicken soaked in a dr pepper marinade, and serve it with grilled fresh veggies. yum!
I made bruschetta for dinner — diced grape tomatoes mixed with balsamic vinegar, dried oregano, dried basil, and parmesan cheese spread on a sliced baguette and topped with mozzarella. So good! And the oven only had to be on for 10 minutes! 🙂 lindsay23 (at) gmail (dot) com

Our favorite summer meal is crock pot pulled pork sandwiches and homemade coleslaw. Put the meat in the crock pot in the morning, play all afternoon, and supper is ready!

This bread does look so good! My favorite summertime recipe is to make a batch of parmesan/oatmeal flour crusted boneless chicken breast and then to serve it ceasar salad style all week for lunches/dinner. We even made it at the beach while on vacation and brought it down for lunch from our condo…all the other people on the beach were wondering where we got our salads…lol Thanks for the fun giveaway and best of luck with the cookbook launch for Real Mom Kitchen. In the summer we love homemade salad bar with lots of yummy options, fresh veggies, some chicken or ham, cheese, croutons and a few dressing options served with some yummy bread or roll!

We live out in the desert and most days during the summer are over 100-degrees, so we often like to eat cool meals such as a mixed green salad with poached salmon or sliced chicken breast on top. Another favorite meal is grilled salmon with corn on the cob on our barbecue.

That cookbook looks wonderful! My favorite summer time meal is lemon asparagus pasta.
We love to put something on the grill and then head to the garden to finish the meal. There is something about a garden fresh salad or veggies that just complete a summer time meal.

I made a chicken salad that had a few interesting ingredients and it was heaven; just right for summer. Keep up the good work.
To make my favorite easy summer meal I cut up the meat from half of a supermarket roasted chicken and add it to a big salad full of whatever vegetables are in season.
Maybe I am lazy, but one of my favorite summertime meals is a simple turkey sandwich with fresh lettuce, tomato, and maybe some avocado! mmmmm.

One of my favorite summer meals is chicken bacon wraps…yum! Shredded chicken, bacon, avocado, lettuce, tomato, cheese and honey mustard dressing all rolled up in your favorite tortilla! It's great with some fresh fruit and you can call it a meal.

Best meal would be something I didn't have to cook since it's too hot where I live!
I love it when my husband will do the BBQ, and then all I have to make is a simple salad (romaine with strawberries and Brianna's poppyseed dressing is my favorite).
