Hello friends and welcome to you. I ended up with a bunch of leftover ham from the Easter holiday and thought I would try my hand at Ham and Bean Soup using my instant pot. I’m trying to make better use of it lately and can I tell you…that thing is a real time saver! I know many of you love yours…I am a little late to the party. Better late than never, right? We’ve been using it for mashed potatoes and hard boiled eggs lately and man! It’s so easy and efficient.

Today’s soup recipe is nice and thick, has an amazing flavor and provides a great hearty meal my whole family loves. We usually just serve it with simple saltine crackers, but it’s also wonderful with Fabulous French Bread…if bread making is your kind of thing. 😉

Instant Pot Ham and Bean Soup

Prep Time: 5 minutes

Cook Time: 1 hour

Total Time: 2 hours

Yield: 15 servings

Ingredients

1 Tb olive oil
1 small onion, chopped
3 cloves garlic, minced
2 large carrots, peeled and chopped
2 C ham + a ham bone (if you have it)
4 C dry great northern white beans
10 C water
9 tsp beef bullion
1 tsp rosemary
1 tsp thyme
2 Tb fresh parsley (optional)

Instructions

1. Turn the instant pot to the saute setting. When it heats up add the oil and allow it to heat through.
2. Add the chopped veggies and saute until the onions are translucent.
3. Add all other ingredients (except the fresh parsley).
3. Give it a nice stir and close the lid.
4. Cook on high pressure for 60 minutes. It will take about 15 minutes for the pot to heat up, then the 60 minutes will start. When it's finished allow it to slow release (should take about 20 minutes).
5. Remove the ham from the pot, and shred it with two forks. Place it back in the pot and add an additional 1 1/2 C water and the fresh parsley.
Serve and enjoy!

Notes

This amazing soup freezes super well. I like to freeze a bunch in individual quart sized ziploc freezer bags for easy reheat.
