I have a super fun, cute, festive, Valentine-sey post for you all today. Delicious, soft and and chewy sandwich cookies in red, pink and white. What could be more adorable and holiday appropriate, I ask you. ๐

They are super yummy, and would you believe me when I tell you they are also super simple to make, and here’s why…



The dough is made from a simple cake mix, melted butter and 1 single egg, my friends. Easy, yes?

I recently partnered with Meadow Gold, creating INSTAGRAM reals that use their fabulous products in my recipes. They suggested putting together a fun Valentine’s Cookies and Milk basket for one of my reels, I immediately agreed. Cookies are my love language, after all. I adore baking them and packaging them up to deliver to those I love.

Imagine yourself giving a fun basket of these cookies and little individual Meadow Gold milk jugs. Fun and adorable and delicious. A triple win, right?


Did I mention how soft and chewy these delicious cookies are?

I hope you get a chance to try them! Also, please note…they freeze super well so you could make them ahead of time, then just package and deliver at your time of choice.

Ingredients
- 1 red velvet cake mix
- 1 strawberry cake mix
- 1 white cake mix
- 1 1/2 C butter
- 3 eggs
- FROSTING:
- 1 (8 oz) package cream cheese, softened
- 1/2 C butter, softened
- 6 C powdered sugar
- 3 Tb milk
- dash salt
- 2 tsp vanilla
Instructions
- Preheat your oven to 350 degrees. (325 for convection ovens).
- Grab your stand mixer, and pour the red velvet cake mix into the bowl. Heat 1/2 C of butter (one stick) in the microwave for 30 seconds, or until melted.
- Turn your mixer on to slow speed and drizzle the butter into the mixer while it is going. Once it is combined, add the egg and mix until well combined. Should take about 2 minutes.
- Remove the red dough from the mixer and set it out onto a parchment lined cookie sheet. Cover with a bit of plastic wrap so it doesn't dry out while you mix the other colors.
- Repeat steps 2-4 with the strawberry and white cake mixes, making sure to mix them individually so we retain three different colors.
- Scoop each color of dough into balls and place on cookie sheets. I like a little smaller cookie for this recipe (about 1 inch cookie dough balls), but you can make whatever size you like. I used both 4x4 and 5x5 plastic cookie bags to wrap them with. See them at AMAZON HERE and HERE.
- Bake for 8-9 minutes or until the tops crack. Remove from the oven and allow them to finish baking on the hot cookie sheet. It's super important not to over bake. Underbaking will ensure the cookies stay super soft and delicious.
- While the cookies are cooling, make the frosting. Place the softened cream cheese and butter into your stand mixer. Beat until smooth. Add the rest of the ingredients and mix until smooth. Scoop 1/3 of the frosting into a separate bowl and add a couple drops of red food coloring, stirring to combine. We'll use this pink frosting for the white cookies.
- Grab a cookie, spread the underside of it with frosting, sandwiching the frosting with another cookie, bottom side facing the frosting. Repeat with all the cookies.
- Drop each cookie into a plastic cookie bag with a To: and From; name tag on one side and a Happy Valentines Day Card on the other side.
- Arrange in a basket with little milk jugs.
