Everything you love about pepperoni pizza, but in a little bite form. Cheesy, gooey, delicious and ready in just 30 minutes!

I had a great time crating these with my cute grandson, Theo. They are super easy to put together! Hope you get a chance to try them!

Pizza Bites

Ingredients

  • 1 C warm water
  • 1 T sugar
  • 1 T yeast (I use Active Dry Yeast)
  • 1 t salt
  • 3 T vegetable or canola oil
  • 2 1/2 - 3 C flour
  • 2 cups pre-made Pizza Sauce
  • 2 C mozzarella cheese, grated
  • 1 C parmesan cheese, grated
  • 24 large pepperonis
  • 1/2 (5 oz) bag mini pepperonis
  • 1-2 tsp Italian seasoning

Instructions

1. Pre-heat your oven to 475 degrees.
2. Fill up a glass measuring cup with 1 cup of warm water and add 1 tablespoon of sugar. Add 1 tablespoon of yeast and stir it in until the yeast and sugar have dissolved. Let it sit for 5 minutes, or until it bubbles up nicely for you.
3. Pour the foamy water mixture into your stand mixing bowl. Add 1 teaspoon salt and 3 tablespoons of oil.
4. Add 1 cup of flour and mix on low for 30 seconds. While the mixer is on, add the rest of the flour. You need between 2 1/2 - 3 cups total. Watch the dough while it mixes. When it begins to pull away from the sides of the bowl, you have enough flour. Another way to tell if you have enough flour, is by touching the dough. If it sticks like crazy to your finger, you need more flour. Once you have enough, let it mix on medium speed for 3 minutes.
5. Cover the bowl with some plastic wrap and let it rest for 5 minutes. 
6. Spray your countertop with cooking spray and place the dough out onto it. Allow it to rest for five minutes. 
7. Roll out the dough into a large rectangle. Using a pizza cutter, cut it into 4 long strips, and then cut those strips into small rectangles. You need 24 total. 
8. Spray 2 muffin tins with cooking spray. Place a piece of the pizza dough into the bottom of each muffin tin. 
9. Cover each dough piece with 1-2 Tb pizza sauce, and spread it out evenly over the dough. 
10. Add 1 large pepperoni to each one, then a bit of mozzarella and parmesan cheese. 
11. Add 3 mini pepperoni to each one, and sprinkle with a bit of Italian seasoning. 
12. Bake for 12-15 minutes, or until the dough has cooked through and is slightly browned on the bottom. 
13. Allow the pan to sit on the counter and cool for about 5 minutes, then dig in. 

Notes

These reheat super well in the air fryer.
