If you’re looking for a salad that’s as delicious as it is nourishing, this is it. Packed with kale, cabbage, carrots, celery, peppers, snap peas, and plenty of crunchy goodness, this colorful chopped salad is tossed with a creamy sesame peanut dressing and topped with toasted sesame seeds and peanuts.

It’s perfect for meal prep because the hearty vegetables stay fresh and crisp for days. I love keeping all the ingredients prepped and stored separately in a large container so everyone in my family can build their own bowl. It’s works great on your weeknight dinner table…

…or sitting next to the burgers at your next backyard barbecue.

Ingredients
- SALAD:
- 1 C quinoa, or brown rice, or pearl barley, cooked according to package instructions
- 1/2 a medium sized purple cabbage
- 6 C kale
- 1 red bell pepper
- 8 stalks celery
- 1 (1 lb) bag mini or shredded carrots
- 1 (1 lb) bag snap peas
- 5 green onions
- 1 (15 oz) can garbanzo beans (chic peas)
- DRESSING:
- 3/4 C mayonnaise (I use Best Foods Light)
- 1/2 C apple cider vinegar
- 1/4 C soy sauce
- 3/4 C sugar
- 1/2 t salt
- 2 T minced garlic
- 1/2 C peanuts (dry roasted)
- 1/4 t sesame oil
- 1 T toasted sesame seeds
- pinch red pepper flakes
- OPTIONAL TOPPINGS:
- toasted, salted peanuts
- toasted sesame seeds
Instructions
- Prepare your quinoa, brown rice, or pearl barley according to package instructions. Set aside to cool.
- Chop all of your veggies.
- Make the dressing by pouring all the dressing ingredients into a blender and blend until smooth.
- Drain your can of chic peas and give them a nice rinse.
- Now, we are going to lay out the salad. I like to keep it a large rectangle glad-ware container, or serving platter, so we can get it out during the week to enjoy. Layer each salad ingredient, including the veggies, quinoa and chic peas side by side into your container.
- When you are ready to serve, allow guests or family members to dish out what they like. Top each serving with more toasted sesame seeds and peanuts to garnish.
- Toss with dressing just before you serve.
