Easy to make and loaded with nourishing ingredients, this Homemade Granola is fabulous to sprinkle on the top of yogurt or to eat plain as a snack. My sweet neighbor brought us a batch a few weeks ago and my boys asked if we could keep it “meal prepped” at all times. It’s super tasty!

Ingredients
- 4 C old fashioned oats
- 1 1/2 C nuts or seeds (we used pecans, but pumpkin seeds would also be wonderful)
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 C melted coconut oil (or olive oil, we prefer coconut oil)
- 1/2 C honey (or maple syrup, we prefer the honey)
- 1 tsp vanilla
- 2/3 C raisins or craisins
- 1/2 C mini chocolate chips
- 1/2 C shredded coconut
Instructions
- Preheat your oven to 350 degrees and line a large baking sheet with parchment paper.
- In a large bowl, stir together the oats, nuts, salt and cinnamon.
- Pour in the melted oil, honey and vanilla. Mix well, until all the oats are lightly coated.
- Pour the granola onto your prepared pan and use a large spoon to spread it into an even layer.
- Bake for 10 minutes, and remove the pan from the oven and give everything a nice stir. Pat the granola back down with your spatula and return it to the oven.
- Bake for an addition 5-10 minutes. If you like your granola on the chewy side, bake it closer to the 5 minute mark than the 10.
- Remove the pan from the oven and allow it to cool completely (for about 45 minutes) before you break it into pieces. It will continue to crisp up as it sits.
- Add the dried fruit, chocolate chips and coconut and toss together to combine.
- Store in an airtight container at room temperature for 1-2 weeks. You can also freeze it for up to 3 months.
