These Ground Beef Sweet Potato Bowls are loaded with delicious, fresh flavor and satisfying ingredients. Sweet potatoes are roasted until caramelized and tender, then topped with a smoky, savory mixture of seasoned ground beef and black beans. Add sweet corn, fresh cilantro, creamy avocado, and a bright cilantro dressing, and you’ve got an easy, colorful meal that is hearty without feeling heavy. The Cilantro Lime Cream sauce is also fabulous. You could easily make your own (see my recipe for CILANTRO LIME DRESSING, here) but this yummy version from Costco is sure easy and is pretty low in calorie. A double win, yes?

Ground Beef Sweet Potato Bowls with Black Beans and Avocado

Ingredients

  • 6 small sweet potatoes, cut in half lengthwise
  • 1-2 Tb olive oil
  • salt and pepper
  • 2 pounds ground beef (I used 93% lean)
  • 1/2 C onion, diced
  • 1 tsp oregano
  • 1 tsp Kinders Woodfire Smoked Garlic seasoning (or taco seasoning)
  • 1 1/2 tsp seasoned salt (we use Lawry's)
  • 1 tsp smoked paprika
  • 1/2 C water
  • 1 (15 oz) cans black beans, NOT drained
  • 3 Tb tomato paste
  • TOPPINGS:
  • avocado
  • cilantro
  • frozen corn, warmed through
  • crushed tortilla chips
  • DRESSING:
  • Cilantro Lime Dressing (we like Don Pancho, sold at Costco) homemade version linked below

Instructions

  1. Preheat your oven to 400 degrees.
  2. Line a baking sheet with foil or parchment paper. Lay your sweet potatoes onto the sheet, drizzle them with the olive oil and sprinkle generously with salt and pepper. Rub the oil and seasonings all over each sweet potato, then lay them cut side down on the baking sheet.
  3. Pop them in the oven and bake for 45 minutes, or until fork tender and the cut side has caramelized. Remove the pan from the oven and allow it to rest for about 10 minutes.
  4. While the potatoes are cooking, prepare the beef. Grab a large deep skillet and heat it up over medium high heat. Spray it well with cooking spray and add the diced onion and ground beef. Break the meat up with a spatula and allow it to cook and get nice and browned.
  5. Add the seasonings, water, black beans (including the liquid in the can) and tomato paste. Give it a nice stir to combine. Cook for about 10 minutes, stirring occasionally. This will allow the flavors to meld nicely together.
  6. Set the sweet potatoes, beef mixture, corn, avocado, cilantro, crushed tortilla chips and Cilantro Lime Dressing (homemade recipe HERE) on the counter and allow your family to build their own bowls.
