There is just something delightful about this delicious nostalgic bar! Scotcheroos are an easy, no-bake treat made with crispy rice cereal, peanut butter, and a sweet corn syrup mixture, then topped with a smooth layer of melted chocolate and butterscotch chips. They’re chewy, crunchy, chocolatey, and completely irresistible! With simple pantry ingredients and no oven required, these classic bars come together quickly and are perfect for parties, bake sales, lunchbox treats, or whenever you need an easy dessert everyone will love.

Ingredients
- 6 C Rice Krispies cereal
- 1 C light corn syrup
- 1 C peanut butter (we like chunky)
- 1/2 C light brown sugar, packed
- 1/2 C sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1 (11 oz) bag butterscotch chips
- 1 (11 oz) bag milk or semi sweet chocolate chips
Instructions
- Grab a 9x13 pan and spray it well with cooking spray. Or line it with a piece of parchment paper.
- Place your Rice Krispie Cereal into a large mixing bowl.
- Into a medium sized sauce pan, place the corn syrup, peanut butter, brown sugar, sugar and salt. Give it a nice stir to combine. Heat it up on the stove top, over medium high heat until everything is melted, well combined and smooth. Should only take a few minutes. Add the vanilla and stir to combine.
- Quickly pour the gooey mixture over the top of the Rice Krispie Cereal and stir everything together.
- Gently press the mixture into your prepared pan. Gently, my friends. If you press too hard, they will be difficult to chew.
- Pour the butterscotch and chocolate chips into sauce pan. Heat over medium high heat, and stir until the chocolate is mostly melted. Take the pan off the burner and allow them to finish melting without the added heat. Stir until nice and smooth, then pour over the top of the bars.
- Allow to set for 2 hours, or until the chocolate has hardened back up for you.
- Cut into bars and serve!
Store leftovers in an airtight container for up to 5 days.
