These yummy little mug cakes (or baked cookie cups, as I’ve seen them called) have shown their face in my kitchen more than any other recipe over the past few months. Loaded with wholesome ingredients, like oats, eggs, milk, honey and bananas, my teen sons describe them as having “everything you need post workout”. As an added bonus, they are so yummy and satisfying. They sit well, if you know what I’m saying here. 😉

The texture is a cross between a warm cookie and a thick but moist cake. We usually just add chocolate chips…

…but they are great with other additions as well. Apple chunks, blueberries, butterscotch chips and raisins. There are so many possibilities.

My boys have also been making the batter into pancakes so they can take them along to eat just after they finish running. Clever, yes? Making them into pancakes also cuts way down on the cooking time.

They are also, so very simple to make. You just grab all your ingredients.

…place them in a small blender.

We are big fans of the amazing Ninga Blender. It’s reasonably priced and so efficient.

Blend it all up for 20 seconds or so and them pour into 4 oven save baking cups or ramekins.

Add what ever topping you like and bake for about 25-30 minutes, or pour into rounds on a hot griddle and cook as you would a regular pancake.

Healthy Oatmeal Banana Mug Cake and/or Pancake Batter

Serves: 4 mug cakes or 4 pancakes Prep Time: Cooking Time:

  • 1 C rolled oats (quick cooking or old fashioned is fine)
  • 1 large, very ripe banana (or 2 small bananas)
  • 2 eggs
  • 1/2 C milk
  • 2 Tb honey
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 1/4 tsp cinnamon
  • dash salt
  • add 2 Tb wheat flour or 2 Tb peanut butter powder
  • chocolate chips
  • nuts
  • apples
  • blueberries
  • butterscotch chips


  1. Preheat your oven to 350 degrees.
  2. Place all the ingredients (except the toppings) into a small blender or blender bottle and mix on high for 20 seconds or until the mixture is a nice liquid form for you.
  3. Spray 4 oven safe baking cups or ramekins with cooking spray and pour the batter out evenly into the cups.
  4. Top with 1-2 Tb chocolate chips, apples, nuts, or blueberries.
  5. Bake for 25-35 minutes, or until cracked along the top and cooked all the way through. Insert a toothpick into the center to test if it's done.
  6. Eat warm from the oven.


For pancakes, make the batter according to instructions above adding 2 Tb wheat flour OR 2 Tb peanut butter powder.  Heat a large skillet up over medium high heat, then pour the batter into rounds and top with chocolate chips. Flip when the batter starts to bubble up and bottom is browned. Cook for an additional 1-2 minutes and you are good to go!
