My new favorite way to bake potatoes! Not only does cooking them in the Crock Pot save you from heating up your oven, but you can prep them up to 6 hours ahead. The best part is the texture! It’s light and fluffy and tastes delicious. Load them down with all your favorite toppings and you have a fabulous side dish with hardly any effort. A win in my book!

Grab some Yukon Gold potatoes, wash and dry them well. Take a fork and stab each potato several times.

Lay each potato on a small rectangle of aluminum foil and drizzle it with a bit of oil oil and sprinkle with some salt and pepper. Roll the potato around so that the oil and seasonings cover it evenly.

Wrap the potatoes up tightly with the foil and place them in a large crock pot. Cover and bake on low for 6 hours or on high for 4 hours.

Remove the foil, serve and enjoy! So easy, so delicious.

Ingredients

  • 8 medium to large sized Yukon Gold potatoes
  • olive oil
  • freshly cracked salt and pepper
