This simple side dish of sauteed zucchini, onions and yellow summer squash has graced our table repeatedly this past summer. The addition of a tiny bit of butter and fresh (or dried) thyme gives it an added depth of flavor that keeps this healthy dish both exciting and desirable. 🙂 Something every family can love, right?

Ingredients
- 2 medium zucchini
- 2 medium yellow summer squash
- 1 medium onion
- 1/2 tsp fresh thyme (or dried, if that's what you have)
- 1 Tb butter
- salt and pepper
Instructions
- Slice your zucchini and yellow squash into rings. Slice the onion into thin strips.
- Heat a large, deep skillet up over medium high heat.
- Spray the pan generously with cooking spray and add your veggies. Cook until they get a nice dark sear on one side. This sear will really add to the flavor.
- Stir with a spatula, and add 1-2 tsp water.
- Cover the pan and cook until crisp tender.
- Remove from the heat, add the thyme and butter, tossing to combine. Add a bit of salt and pepper, give it a taste and add more to your liking.
