These fabulous bars have a rich caramel like flavor, are chewy like a rice crispy treat and can be made in just minutes. To say they are divine would be a grand understatement. If you like the infamous Gooey Sweet Coconut Chex Mix, this is similar, only in a bar form. I created it a couple weeks ago when I needed to take a dessert to a family party, but didn’t have time to go to the store. Sometimes the best recipes are born out of necessity, right?
I happened to have these ingredients on hand, and oh, man. These delightful bars were born. I can see myself making them many times this summer, they are so easy.
Let me show you how to make them happen!
Place the butter in a large pan, melt it over medium high heat and allow it to foam up and turn brown. It should only take a few minutes. Remove the pan from the heat and add your marshmallow, stirring until they are melted.
Remove from the heat and stir in the Honey Bunches of Oats. Work quickly, the warm sauce will start to set up as soon as you remove the pan from the heat.
Add the half of the white chocolate and coconut. Stir it in to combine. The white chocolate will melt a bit for you, no worries.
Spray a 9×13 pan with cooking spray. Spoon the mixture into it and press it down with a rubber spatula or wooden spoon.
Immediately sprinkle the rest of the white chocolate over the top of the warm bars. They will melt just a bit, allowing them to attach to the bars.
Let the bars rest for 20-30 minutes so they can cool or set. (Or dig in while they are warm if you’re not set on cutting them into bars.)
Serve and enjoy!

- 1 tsp vanilla
- dash salt
- 1/2 C sweetened coconut flakes
- 1 C white chocolate chips, divided

- Add the half of the white chocolate and coconut. Stir it in to combine. The white chocolate will melt a bit for you, no worries.
- Spray a 9x13 pan with cooking spray. Spoon the mixture into it and press it down with a rubber spatula or wooden spoon.
- Immediately sprinkle the rest of the white chocolate over the top of the warm bars. They will melt just a bit, allowing them to attach to the bars.
- Let the bars rest for 20-30 minutes so they can cool and set. (Or dig in while they are warm if you're not set on cutting them into bars.)
- Use a sharp knife to cut into bars.
- Store in an airtight container.
