Skillet Sweet and Sour Pork

Ingredients

  • 1 1/2 pounds pork chops
  • 1/2 tsp lemon pepper
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 Tb olive oil, divided
  • 1 white onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 (10 oz) pineapple chunks
  • SAUCE:
  • 1 C pineapple juice (just use all the juice from the can listed above, if you don't have an entire cup, add a bit of water)
  • 1/2 C apple cider vinegar
  • 1/2 C sugar
  • 2 tsp chicken bullion granules
  • 4 Tb soy sauce
  • 2 Tb ketchup
  • 3 Tb cornstarch

Instructions

  1. Grab your pork chops and a pair of sharp kitchen scissors. Cut the pork up into small (about 1 inch) pieces. Sprinkle them with the lemon pepper, salt and pepper.
  2. Slice your peppers and onions into thin strips.
  3. Heat a large deep skillet up over medium high heat. Add 1 Tb oil and once it heats through add your seasoned pork. Cook, stirring occasionally, until it's cooked through and has a nice golden sear on the outside. Should only take 7-10 minutes. Remove the cooked pork to a plate and cover with foil.
  4. Add another Tb of oil to your hot pan, allowing it to heat through. Scrape the bottom of the skillet with a spatula, loosening any of the delicious bits of pork that may have gotten stuck to the bottom of the pan. These tasty bits will add a great layer of flavor to your veggies. Toss those sliced onions and peppers into the skillet and cook, stirring occasionally until they are wilted a bit and crisp tender.
  5. Whisk together all of the sauce ingredients.
  6. Add the pork back to the skillet full of veggies. Pour the pineapple chunks and the sauce into the skillet. Cook and stir occasionally, over medium high heat until the sauce thicken and becomes nice and shiny. It should only take a few minutes.

Serve over a bed of fluffy white rice. Enjoy!
