This easy Rotisserie Chicken White Bean Chili is everything you want in a quick weeknight dinner! It’s smoky, hearty and full of flavor, but comes together with simple ingredients in just 30 minutes. Top each warm bowl with creamy avocado, fresh cilantro and crunchy tortilla chips for a cozy dinner the whole family will love.
I have several other versions of White Bean Chili on my site. One for CROCK POT, one that makes use of DRIED BEANS and one that includes RICE. Out of all of them, this is hands down my favorite. My family raved about it and even my daughter who claims that White Bean Chili nearly ruined her childhood (ha!) felt this version could trump her past belief.
It also reheats super well, making it fabulous for leftovers.

Ingredients
- 3 Tb butter
- 1 medium onion, finely diced
- 1 (4 oz) can fire roasted green chilis
- 1 Tb garlic, minced (bottled is fine)
- 1/2 C flour
- 4 C water
- 4 C milk
- 1 C half and half
- 4 Tb chicken bullion granules
- 1 1/2 tsp chili powder
- 1 Tb oregano
- 2 tsp Kinders Woodfire Smoked Garlic Seasoning
- 1/4 tsp cayanne pepper
- 1 tsp sugar
- 4 (15 oz) cans Great Northern White Beans, drained and rinsed
- 2 C rotisserie chicken, chopped
- salt and pepper to taste
- OPTIONAL TOPPINGS:
- cilantro
- tortilla chips
- shredded cheddar cheese
- lime wedges
- avocado
Instructions
- Grab a large soup pot and heat it up over medium high heat. Add your butter and allow it to melt. Toss in the diced onion and cook for several minutes, stirring occasionally, until the onions have started to wilt. Add your fire roasted green chilis and give everything a nice stir. Cook for several more minutes, until the onions are translucent. Add your garlic and stir to combine.
- Sprinkle the mixture with the flour and give it a nice stir. It will become kind of pasty and that's what we're looking for.
- Add all of the liquids. The milk, water, and half and half. Whisk together to combine.
- Add the chicken bullion granules, chili powder, oregano, Smoked Woodfire Garlic Seasoning, cayenne pepper and sugar. Continue to whisk the mixture occasionally, until it starts to bubble upย and thicken. Should only take a few minutes.
- Add the drained white beans, and chopped rotisserie chicken. Stir to combine. Give it a taste and add salt and pepper to your liking.
- Allow it to bubble up again and simmer for 10-15 minutes.
- Serve with a side of tortilla chips, cilantro, avocado, shredded cheddar cheese, and lime wedges. (Truthfully, the toppings are fabulous but it's really, really good just on it's own, if simple is your vibe.)
