This amazing dish is loaded with hearty tortellini, a thick and hearty tomato sauce and has gooey cheese on the top. Not only is it delicious, but it literally comes together in just over 15 minutes, uses basic ingredients and is all cooked in one skillet, making cleanup easy as well. Truly, you don’t need to cook the tortellini separately.

One Skillet, my friends. That’s it.

This recipe has become one of my “go-to” solutions for a quick dinner that’s both hearty and satisfying.

Let me show you how to make it happen.

Heat a large deep skillet up over medium high heat. Add the oil and allow it to heat through. Add the pepper and onion and cook until crisp tender. Add the garlic and cook for another 2-3 minutes.

Add your jar of marinara sauce and allow it to heat through.

Grab your tortellini. I like to buy this fresh version at either Sam’s Club or Walmart. It comes in a 2 pack and freezes super well. You just need one package for this recipe. Toss the other package in the freezer for another day.

Add the tortellini, broth and balsamic vinegar to the skillet, stir to combine. Bring it to a nice simmer…

…then cover the pan with the lid on an angle so some of the steam can escape.

Cook for 7-10 minutes, stirring occasionally, until the tortellini is soft and cooked through.

Look at how lovely and thick and delicious that looks! Turn off the heat and sprinkle on the cheese and parsley. Cover the pan again, allowing the cheese to melt.

Then serve and enjoy!

Ingredients

  • 1 green pepper, chopped
  • 1/2 white onion, chopped
  • 2 tsp garlic, minced (bottled is fine)
  • 1 C beef broth
  • 1 Tb balsamic vinegar
  • 1 (32 oz) jar marinara sauce
  • 1 (24 oz) package of tortellini
  • 1 C mozzarella cheese, grated
  • 1/2 C parmesan cheese, grated
  • 1 tsp parsley, dried or fresh

Instructions
