This One Pan Cheesy Chicken and Orzo Casserole is the ultimate easy comfort food! Made with tender chicken, creamy orzo pasta, tomatoes, spinach and a yummy cheesy sauce, this simple dinner comes together in just one pan for minimal cleanup. Let me show you how to make it happen!

Heat your oven to 425 degrees.

Spray a 9×13 pan with cooking spray. Pour into the pan, the tomatoes, spinach, minced garlic, garlic salt, Italian Seasoning and orzo pasta.

Add your chopped chicken, broth and Half and Half.

Give everything a nice stir and bake for 45 minutes.

Remove it from the oven and give the pasta a taste to make sure it’s done. If not, pop it back in the oven for just a bit.

When the pasta is al dente, stir in 2 C mozzarella cheese, making sure it’s well distributed. Sprinkle the parmesan cheese on top and put it back in the oven for 10 minutes, or until the cheese is melted.

Ingredients

  • 2 pints grape tomatoes
  • 2/3 C spinach, chopped
  • 1 (16 oz) box orzo pasta (no need to cook it separately, it will cook in the baking dish)
  • 1 tsp minced garlic, bottled is fine
  • 1 tsp garlic salt
  • 1 tsp Italian seasoning
  • 2 C rotisserie chicken, chopped
  • 4 C chicken broth
  • 1/2 C half and half
  • 2 C mozzarella cheese, shredded
  • 1 C parmesan cheese, shredded

Instructions

  5. Remove it from the oven and give the pasta a taste to make sure it's done. If not, pop it back in the oven for just a bit.
  6. When the pasta is al dente (not overdone), stir in 2 C mozzarella cheese, making sure it's well distributed. Sprinkle the parmesan cheese on top and put it back in the oven for 10 minutes, or until the cheese is melted.
  7. Serve and enjoy!
