This Creamy Ranch Chicken is the ultimate easy comfort food—just 4 simple ingredients and your slow cooker does the work! Tender chicken simmers all day in a rich, ranch-seasoned cream sauce that’s perfect for spooning over mashed potatoes or rice. And here’s a bonus trick: wrap a few garlic cloves in foil and set them on top of the chicken while it cooks. By dinnertime, you’ll have sweet, roasted garlic ready to mash into your potatoes for a side dish that pairs perfectly with the creamy chicken. Family-friendly, fuss-free, and so delicious.


Can you spy the little tin foil package of roasted garlic? It’s a clever trick, right? It’s going to help enhance the flavor of your mashed potatoes!

Ingredients
- CREAMY RANCH CHICKEN
- 4-5 chicken breasts (fresh or frozen)
- 2 (14 ounce) cans cream of chicken soup
- 4 Tb melted butter
- 2 (1 ounce) packages of Hidden Valley Ranch Dressing Mix
- 4-5 cloves of garlic
- ROASTED GARLIC MASHED POTATOES
- 10 Yukon Gold potatoes, peeled and cubed
- 4 Tb butter
- 1/2 - 1 C milk (more as needed)
- roasted garlic (from the crock pot)
- salt and pepper to taste
Instructions
- Spray your crock pot with cooking spray.
- Place your chicken into the crock pot.
- Grab a large glass measuring cup, or medium sized mixing bowl. Whisk together the cream of chicken soup, ranch mix and melted butter. Spread it over the top of the chicken.
- Peel your cloves of garlic and place them in the center of a small piece of aluminum foil. Wrap the foil around the cloves and place this little package in the corner of your crock pot, on top of the chicken.
- Cover and cook on low for 6 hours, or on high for 4 hours.
- When you are about 30 minutes away from serving, prepare your mashed potatoes. I like to make mine in the Instant Pot, see directions HERE. No instant Pot? No worries. Peel your potatoes and chop them into big chunks. Place them in a large pot and cover with hot water. Bring it to a boil and allow the potatoes to cook until fork tender. Carefully pour the water out of the pan and add the butter, milk and salt and pepper.
- Carefully remove the garlic packet from the crock pot and open it up. Mash the roasted garlic with a fork and add it to your mashed potato pot. Using electric hand beaters, blend all of the ingredients together, until the mixture is smooth and creamy. Add more milk, salt and pepper to your liking.
- Use two forks to shred the chicken up a bit.
- Serve the chicken and gravy with the Roasted Garlic Mashed Potatoes.
