Chicken and Black Bean Nachos

A couple of weeks ago I got a fun package in the mail from my friends at Kroger. Inside were some fun things to make s’mores…

and a sample of their new PeakFection Red Salsa and PeakFection Guacamole. These two yummy products are part of Krogers new line of fresh salsa and guacamole. The salsa comes in 5 different varieties (three red salsas with different levels of spice and two roasted tomato salsas in two spice levels). The guacamole comes in regular and spicy. All of these products can be found in your local Kroger store in the deli.

Kroger challenged me to come up with a recipe using these two products. Doesn’t sound like a bad gig, does it. I mean really. Who could complain about taste testing salsa and guacamole. 🙂 They are both wonderful and very fresh tasting. My family and I have had a fun time using them in the kitchen. The Chicken and Black Bean Nachos I am sharing with you today were gobbled up in a jiffy.

These nachos would make a great after school snack or simple lunch/dinner. You only need 15 minutes to make them a reality, gang. That is something to smile about, yes?

Let me show you how to put them together.

Chicken and Black Bean Nachos from Jamie Cooks It Up

Chicken and Black Bean Nachos

Time: 15 minutes! Sweet.
Yield: 4 servings
Recipe from Jamie Cooks It Up!

1 C cooked, shredded chicken (rotisserie chicken would be wonderful)
2 Tb PeakFection Red Salsa
1/8 tsp cumin
1/8 tsp chili powder
salt and pepper
20 tortilla chips, give or take a few
1/2 C black beans
1 C sharp cheddar cheese, grated
1 C Colby jack cheese, grated
black olives, sliced
cilantro
green onion
PeakFection Guacamole

1. Place 1 cup shredded chicken into a bowl.

Pour 2 tablespoons fresh salsa, 1/8 teaspoon cumin and 1/8 teaspoon chili powder over the chicken. Hit it with a little salt and pepper and give it a nice stir. Cover the bowl and heat it in the microwave for about 1 minute, or until the chicken is warm.

2. Place about 12 tortilla chips out evenly onto a plate.

Spoon the chicken out evenly over the chips.

3. Rinse and drain your black beans…

and sprinkle some over the top of the chicken.

4. Grab some sharp cheddar and Colby jack cheeses.

Grate them up nicely…

and sprinkle about 3/4 cup of each over the top of the black beans and chicken.

5. Cover the cheese with a few more chips…

and layer on more chicken, black beans and cheese. Pop the plate in the microwave and heat it for 30 seconds. Check it to see if the cheese has melted to your liking and then heat it again in 30 second intervals until the cheese is melted and wonderful.

6. Chop some fresh cilantro and green onions…

Sprinkle them on top with some sliced black olives.

7. Carefully spoon some PeakFection guacamole and salsa onto the chips.

Serve immediately and enjoy!
