If you are looking for a super easy dinner or lunch idea, this is it baby. This is one of those “clean the fridge out” kind of recipes where you take what you have on hand and turn it into something great, fast and delicious. While we were at Bear Lake this past week, My sister-in-law Mary showed me this easy way to use up some leftovers we had in the fridge, and man they turned out so good! Soft flour tortillas are loaded with seasoned ground beef, lemon butter rice and cheese. The outside of the burrito is then pan fried to make them crispy and down right fabulous.

For these Crispy Beef and Cheese Burritos I opted to use leftover Taco Meat (recipe here), Lemon Butter Rice (recipe here) and cheddar cheese. However you could use any kind of precooked, seasoned meat. Shredded Mexican Chicken (recipe here) or Sweet Cafe Rio Pork (recipe here) would be perfect as well. You could use plain cooked rice or Cilantro Lime Rice (recipe here) or Simple Spanish Rice (recipe here) also.

There are a lot of possibilities with this one, gang. Hope you make them and love them to pieces.

1. Grab a flour tortilla. (the 8 inch size works great).
2. Spoon about 1/4 cup seasoned ground beef (I used this Taco Meat recipe), 1/4 C rice (I used Lemon Butter Rice) and 1/4 C grated cheddar or mexican blend cheese. If you sprinkle the cheese down both sides of the filling it will help the burrito stick together a bit better.

3. Pop it into the microwave for 10-15 seconds so the tortilla has a chance to get warm and pliable. Tuck the corners in…

…and roll the old girl up. Beautiful!

Make a few, as many as your crew will eat.

4. Heat a large skillet up over medium high heat. When the pan is hot add about 1 Tb olive oil and allow the oil to become hot. Place the burritos in the oil…

and allow them to brown on each side.

Serve immediatly with salsa, guacamole and sour cream.

Ingredients

  • BURRITOS:
