If you are looking for the most simple and easy way to cook chicken thighs, I do believe you have come to the right place. It’s fast, my friends and they come out fabulous every time. I’m not sure you could even call this a “recipe post” per say, but the cooking technique is worth writing about and knowing about and using at your earliest convenience. 🙂 They are my latest addition to the new Sugar Free/Gluten Free recipe category.

Those look tasty, right?

They are, my friends. You might find it interesting to note that my boys end up taking a fork and eating them strait from the pan. 🙂

I’ve experimented with several simple seasonings and always end up going back to…

McCormick Montreal Chicken Seasoning. It has just the right blend and leaves the edges nice and caramelly and loaded with flavor.

Ready to see how simple it is?

Let’s do it.

Grab your self some chicken thighs and a sharp pair of kitchen scissors.

Heat a large skillet up over medium high heat. You can add a bit of oil here, but I just use cooking spray. Chicken thighs naturally have more fat in them than chicken breasts and the extra oil isn’t needed.

Cut them into chunks with the scissors. Cook and stir until the sides start to get golden brown, should take about 7-8 minutes. Sprinkle the Montreal Chicken Seasoning over the top and stir well.

Add about 3 Tb of water to the pan and allow it to simmer and cook until the chicken is cooked through and the water has evaporated, leaving you with a nice crispy exterior.

So good, friends.

They pair well with Roasted Brussel Sprouts and potatoes, or quinoa or rice.

They are equally fabulous with Roasted Spaghetti Squash (and a little butter and parmesan cheese).

They freeze well and are great if you are into meal prepping.

Hope some of you get a chance to try them!

Ingredients

  • 2-3 pounds fresh chicken thighs
  • 1-2 Tb McKormick Montreal Chicken Seasoning
  • 3 Tb water

Instructions

  1. Heat a large, deep skillet up over medium high heat. Spray it generously with cooking spray.
  2. Cut the chicken thighs into chunks and place them in the pan.
  3. Allow them to cook, almost all the way through, allowing a nice golden sear to develop on the outside.
  4. Sprinkle them with the seasoning and stir well.
  5. Drizzle the water evenly over the top and allow it to come to a simmer. Cook for 2-3 more minutes or until the water mostly evaporates.
  6. Serve and enjoy! We love them with pretty much any roasted veggie, quinoa or potatoes.
