This fantastic recipe for Chicken Salad has been living in my archives for more than 12 years now. I brought it to the top of the pile today with new pictures, instructions and a few minimal changes to the ingredient list. It’s got all the elements of a wonderful creamy yet hearty chicken salad, with the addition of crunchy apples and almonds, aromatic rosemary and sweet craisins. You could eat it as a dip for raw veggies or Wheat Thin Crackers, spoon it into a croissant or spread it into some beautiful green lettuce leaves, if you are looking for a gluten free option. As an added bonus…it only takes about 10 minutes to put it together.

Apple Rosemary Chicken Salad

Ingredients

  • 3 C rotisserie chicken, chopped and cooled
  • 1/2 C sliced almonds
  • 1 C craisins
  • 1 tsp dried rosemary (or 2 tsp fresh rosemary)
  • 1 C mayonnaise
  • 1/2 C miracle whip
  • 1 tsp lemon juice
  • 1/2 C green onion
  • 1 large apple, chopped
  • salt and pepper to taste

Instructions

  1. Grab a large mixing bowl, add all the ingredients and stir to combine.
  2. Give it a taste and add salt and pepper to your liking.
  3. Serve and enjoy immediately, or chill in the refrigerator for up to 5 days.

Notes

This is fabulous spread over a croissant, or spooned into large lettuce leaves. You could also use it as a dip for crackers or veggies.
