This fantastic recipe for Chicken Salad has been living in my archives for more than 12 years now. I brought it to the top of the pile today with new pictures, instructions and a few minimal changes to the ingredient list. It’s got all the elements of a wonderful creamy yet hearty chicken salad, with the addition of crunchy apples and almonds, aromatic rosemary and sweet craisins. You could eat it as a dip for raw veggies or Wheat Thin Crackers, spoon it into a croissant or spread it into some beautiful green lettuce leaves, if you are looking for a gluten free option. As an added bonus…it only takes about 10 minutes to put it together.

Ingredients
- 3 C rotisserie chicken, chopped and cooled
- 1/2 C sliced almonds
- 1 C craisins
- 1 tsp dried rosemary (or 2 tsp fresh rosemary)
- 1 C mayonnaise
- 1/2 C miracle whip
- 1 tsp lemon juice
- 1/2 C green onion
- 1 large apple, chopped
- salt and pepper to taste
Instructions
- Grab a large mixing bowl, add all the ingredients and stir to combine.
- Give it a taste and add salt and pepper to your liking.
- Serve and enjoy immediately, or chill in the refrigerator for up to 5 days.
Notes
This is fabulous spread over a croissant, or spooned into large lettuce leaves. You could also use it as a dip for crackers or veggies.
