This hearty and delicious frittata is loaded with seasoned potatoes, bell peppers, ham and pepper jack cheese. The flavor combination is fabulous and as an added bonus, everything is cooked in just one pan, making it super easy to clean up.

The potatoes are sautéed with a bit of butter and smoked paprika. Once they are tender, onion and bell pepper are added.

Then the ham!

The egg and cheese mixture is poured right over the top and sprinkled with more cheese. Let it cook for just a few minutes, or until the edges start to lighten in color. Then it goes in a hot oven to finish cooking.

It will get beautiful and puffy while it cooks. When it’s done, let it sit for a few minutes, then garnish with green onion.

Slice and serve!

Ham and Potato Frittata

Ingredients

  • 2 1/2 C Yukon gold potatoes, diced
  • 2 Tb butter
  • 1/2 tsp smoked paprika
  • salt and pepper
  • 1/3 C red bell pepper, diced
  • 1/3 C orange bell pepper, diced
  • 1/3 C onion, diced
  • 1 C ham, diced
  • 15 eggs
  • 5 Tb half and half
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 C pepper jack cheese, grated
  • green onion, optional

Instructions

  1. Preheat your oven to 425 degrees.
  2. Dice your potatoes into equal sized cubes. They should be about 1/2 an inch. You want them pretty small.
  3. Heat a 12 inch (oven proof) skillet up over medium high heat. Add the butter and allow it to melt.
  4. Add your potatoes, smoked paprika and a bit of salt and pepper and cook until a bit soft on the inside and golden on the outsides. Should take about 5-7 minutes.
  5. Add the diced bell peppers and onion. Cook for several more minutes, or until the onions are translucent.
  6. Slide the potatoes and veggies to one side of the pan and toss the ham in. Sautee it a bit so that parts of it become seared.
  7. In a separate bowl, whisk together the eggs, half and half, salt and pepper. Stir in 3/4 C of the cheese.
  8. Pour the egg mixture over the top of the veggies and ham, stirring so that everything is distributed evenly. Add the rest of the cheese.
  9. Allow it to cook on the stove top for 3-4 minutes, or until the sides of the pan start to turn lighter in color.
  10. Carefully transfer the pan to the oven and bake for 10-15 minutes, or until set in the center.
  11. Remove the pan from the oven and allow it to sit for 5 minutes so it can settle.
  12. Top with green onions, slice and serve.
