I’m excited to announce a new series I’m starting today…15 MINUTE RECIPES, everyone. These wonderful recipes can be made for lunch or dinner or breakfast or brunch or snack time or anytime you need good food quickly. I’ve got a lot of great ideas coming your way, most of which are super clean and healthy. Plan on these recipes coming to you each Wednesday morning for the next while. Hoping to have a dozen or so, at least. First up…
15 Minute Buffalo Chicken Lettuce Wraps, my friends. Hearty, satisfying, so easy and absolutely delicious. I have to admit to making them twice this week. Spicy buffalo chicken, combined with a bit of creamy blue cheese dressing and folded in a crispy lettuce leaf with crunchy celery on top is what you can expect here. It’s low-carb, gluten free, clean, healthy and fabulous.
The ingredients are minimal, which really speeds up the process as well.
This recipe also works super well in a rice bowl with a pretty green veggie, like Roasted Asparagus or Broccoli.
If you like to meal prep…its’s a win as well and will keep in the fridge for 4-5 days and in the freezer for 2-3 months.

Ingredients
- 4 chicken thighs, cut into 1 inch cubes
- 1/3 C Franks Buffalo Wing Sauce
- 1/2 C water
- 1 Tb cornstarch
- 1 tsp chicken bullion granules
- Romain or Ice Berg
- Blue Cheese Dressing
- 3 stalks celery, chopped
Instructions
- Grab a deep skillet and heat it over medium high heat. Spray it with cooking spray.
- Using a pair of sharp kitchen scissors, take each chicken thigh and cut it into chunks, over and into the hot pan.
- Cook, stirring occasionally, until the chicken is golden brown. Should only take 8-9 minutes.
- While the chicken is cooking, grab a glass measuring cup and add the buffalo sauce, water, cornstarch and bullion into it. Stir well to combine, making sure the cornstarch is disolved.
- When the chicken is cooked through and has a nice sear along each piece, pour the sauce mixture directly into the pan. Stir and cook, allowing the sauce to thicken and heat through. Should only take a minute or two.
- Remove from the heat and serve in lettuce leaf, top with a bit of blue cheese dressing and celery.
Notes
This fabulous Buffalo Chicken also works well if you like to meal prep. Just add a bit of rice and a pretty veggie.
