Not only is this fantastic Lasagna Casserole hearty, flavorful and easy to make…but this recipe makes 2 full 9×13 pans. Freeze one pan for later, or better yet, take a pan hot and steaming to a friend. I made a batch last week to help feed my sons Cross Country Team at thier weekly carb load-pre-race dinner.

It was a hit! I assembled them the day before the dinner, and then just baked on the day of. It worked out super well.

The recipe calls for egg noodles, which cook up super quickly. A win in my book.

A hearty red sauce is made with the addition of sausage, onions and peppers.

Before the casserole is assembled, the egg noodles are tossed with a bit of butter and parmesan cheese. This helps the noodles not get soggy.

Then you just layer sauce, noodles, sauce and sprinkle mozzarella cheese over the top.

Cover and bake!

Ingredients

  • 2 pound ground sausage
  • 1/2 white onion, diced
  • 1 yellow or red bell pepper, diced  
  • 1 (48 oz) jar spaghetti sauce 
  • 1 (16 oz) package egg noodles 
  • 1/2 C butter, melted
  • 1/2 t onion salt (or onion powder)
  • 1/2 t garlic salt (or garlic powder)
  • 1/2 C grated Parmesan cheese
  • 1 (12 oz) package mozzarella cheese, grated

Instructions

  1. Preheat your oven to 350 degrees.
  2. Grab a large deep skillet, heat it up over medium high heat. Add the sausage and cook toroughly.
  3. Add the onion and bell pepper and cook for an additional 3-4 minutes.
  4. Pour the spaghetti sauce over the top, stir and bring it to a simmer. Let it cook, stirring occasionally for 20 minutes.
  5. Bring a large pot of water to a boil and cook your egg noodles. Make sure not to over cook them. They will cook up for you in about 7 minutes.
  6. Pour the noodles into a colander in your sink and rinse with warm water.
  7. Into a glass measuring cup, place the butter and melt it in the microwave. Add the onion salt and garlic salt. Stir to combine.
  8. Pour the noodles into a large bowl and drizzle the butter mixture over the top. Toss with the parmesan cheese.
  9. Grab 2 (9x13) pans and spray with cooking spray.
  10. Spread about 1/4 of the sauce over the bottom of each pan.
  11. Spread half of the noodles into each pan and cover with the remaining sauce.
  12. Sprinkle the mozzarella cheese over the top and bake for 40 minutes, or until heated through.

Serve and enjoy!

Notes

This recipe freezes super well. Just assemble the casserole, cover tightly with foil and freeze. When you are ready to use it, remove the freezer and allow it to thaw completely. Bake and enjoy!
