Get ready to turn your dinner routine into a fun fiesta with these mouthwatering Rotisserie Chicken Fajitas! We’re talking about a hassle-free extravaganza that combines the convenience of a store-bought rotisserie chicken with the vibrant flavors of classic fajitas. It’s a recipe that’ll have your taste buds doing the salsa, my friends. I’ve said it before, and I imagine I’ll say it again…but Rotisserie Chicken is the cheapest chicken around these days and I find myself looking for ways to use it up. These amazing Rotisserie Chicken Fajitas are my latest creation and to say they are good would be a grand understatement. Not only are they delicious but can be made start to finish in less than 30 minutes.

You start with a gorgeous array of bell peppers, red onion and zucchini.

Sautee those up a bit and add some canned tomatoes and garlic.

In goes your rotisserie chicken…

…and some fabulous seasonings. You are looking at a powerhouse line up, I am telling you.

This Woodfired Garlic seasonings is one of my all time favorites. It’s available at most grocery stores, including Sam’s and Costco. You can find it on Amazon as well. If you don’t have it and want to make these fajitas without it, just double up on the taco seasoning. 😉

Everything simmers together for a bit and then you are good to go.

Serve it with tortillas, lettuce, tomatoes, cheese, guacamole, sour cream.

Rotisserie Chicken Fajitas

Ingredients

  • 1 red onion, sliced into strips
  • 1 red pepper, sliced into strips
  • 1 green pepper, sliced into strips
  • 1 yellow pepper, sliced into strips
  • 1 zucchini, cut into rings
  • 1 Tb oil
  • 1 Tb garlic, minced (from a jar is fine)
  • 1 (14.5 oz) can diced tomatoes
  • 3 C Rotisserie chicken, chopped
  • 3 Tb taco seasoning
  • 2 Tb Kinders Woodfired Garlic Seasoning (or an additional 2 Tb taco seasoning)
  • 1 tsp liquid smoke
  • 1 Tb lime juice (botted is fine)
  • 2 Tb honey
  • salt and pepper

Instructions

  1. Slice up your veggies. 
  2. Heat a large deep skillet up over medium high heat. Add the oil and let it get nice and hot. 
  3. Add your veggies and sauté until crisp tender. Should only take 5 minutes. You don't want them to be all the way cooked through. 
  4. Add the canned tomatoes, garlic and chicken. Stir to combine. 
  5. Add the seasonings and stir well. 
  6. Cover and cook, stirring occasionally, for 10 minutes. 
  7. Give it a taste and add salt and pepper to your liking. 
  8. Serve with warm tortillas, cheese, sour cream, tomatoes, lettuce and guacamole.
