Ready in just minutes, this fantastic single serve recipe for a large Savory Crepe with Turkey and Cheese has been on replay at my house lately. It’s so simple, filling and delicious! For the filling you could use any kind of meat and cheese combination, even some grilled veggies would be amazing. There are two eggs involved + meat + cheese, giving it a lot of protein, which is always a win in my book.

Let me show you how easy it is.

You simply place all the crepe ingredients into a bullet blender and mix. Pour it into a hot pan you’ve sprayed generously with cooking spray.

Let it cook until it’s completely cooked around the edges and almost cooked in the center. No need to flip it.

Simply add some cheese, deli meat and a big handful of spinach. The spinach is totally optional, but so good.

Using a rubber spatula, fold the crepe over onto itself, so the cheese, turkey and spinach stay on the inside. Fold it a second time, into quarters. Allow it to sit for a few minutes so the cheese has a chance to warm up and crepe can finish cooking all the way through.

I like to add some avocado and sprouts, delicious!

Savory Crepe with Turkey and Cheese for One

Ingredients

  • CREPE MIXTURE:
  • 2 eggs
  • 2 Tb flour
  • 3 Tb milk
  • 1/2 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 1/2 tsp honey mustard
  • FILLINGS:
  • 3 slices deli turkey
  • 1-2 slices Swiss cheese
  • 1 large handful of spinach

Instructions

  1. Into a bullet blender (or regular blender, if that's what you have) place all the crepe ingredients. Blend until smooth.
  2. Grab a large skillet (I used a 13 inch skillet) and heat it up over medium high heat.
  3. Spray it generously with cooking spray and pour the crepe batter into the pan, tilting the pan once or twice so that the crepe batter swirls around and covers the bottom of the pan evenly.
  4. Allow it to sit and cook for 1-2 minutes, until the sides are cooked through, but the center is still just a bit underdone.
  5. Tear the cheese into small pieces and lay it out over the crepe. Spread the deli meat and spinach out as evenly as possible.
  6. Using a rubber spatula, carefully peel one side of the crepe from the pan and fold it in half over the top of itself, so that all the filling is covered up. Fold it one more time, so that the crepe has been folded into quarters.
  7. Let it cook for a few more minutes, or until the bottom is golden brown, the cheese has melted and the crepe has cooked through.
  8. Serve immediately with sliced avocado and sprouts. (optional, but so good!)

Notes

The filling options for this yummy single serve crepe are endless. You could use a variety of meats, cheeses and even sautéed veggies.
