If I could do anything in my power to convince you to make this bread, I would do it. Truly, I would. Not only is it super easy (as all no knead breads are) but the texture, flavor, aroma and taste are the very stuff heaven is made of.
At least…if heaven had a smell, I believe this would be it.

The bread turns out super soft, with a nice chewy outside.

Add this delightful whipped maple butter…

…and you’ve got a match made in…

…you guessed it…heaven. 🙂

Start by pouring your sliced almonds and raisins into a large glass measuring cup. Pour enough water in to cover the ingredients. Let it sit for 10 or so minutes.


Toss together all the dry ingredients, then drain the water from the raisins and sliced almonds and add them to the mixing bowl.


Add the water, and milk mixture, and stir to combine. It will kind of look like a shaggy ball. That’s what we are going for. Lovely and imperfect.

Cover the bowl with a kitchen towel and let it rise for 1-2 hours, or until light and fluffy. Look at all the air bubbles. This is what we are looking for. Once it has risen enough, preheat your oven to 425 degrees.

Take a dough scraper, or heavy duty rubber spatula and pull the sides up and over themselves, breaking down most of the air bubbles and creating again our shaggy looking ball.

Spray a 9 inch pie plate with cooking spray and place the dough into it. Allow it to rest, uncovered for 15-20 minutes…

…or until it has puffed up again.

Bake for 15 minutes, then reduce the heat to 375 and bake for an additional 15-20 minutes or until a thermometer reads 205 degrees.
Brush the top with butter and allow it to sit for at least 30 minutes before you cut it. (This will help it retain it’s shape.)

To make the Whipped Maple Butter, place the softened butter into a medium sized mixing bowl, or your stand mixer. Beat until smooth, then slowly drizzle the the maple syrup into the bowl, while beating continually. Add the powdered sugar, cinnamon, salt and vanilla and beat until it is fluffy and has the appearance of being “whipped”.

- 1 C raisins
- 1/4 C sliced almonds
- 3 C bread flour
- 1 1/2 C wheat flour
- 2 tsp salt
- 1 Tb yeast (I use active dry)
- 1 tsp cinnamon
- 1 1/2 C warm water
- 3/4 C warm milk
- 3 Tb honey
- 1 Tb canola or vegetable oil
- MAPLE BUTTER:
- 1/2 C butter, softened
- 3/4 C maple syrup
- 2 Tb powdered sugar
- 1/2 tsp cinnamon
- 1 tsp vanilla
- dash of salt

I don’t see yeast listed in ingredients list. How much & what type do you use?
Bless you for catching that, Linda. You need 1 Tablespoon. I use active dry yeast.
