It’s super yummy served in a rice bowl with this delicious CILANTRO LIME RICE. It also freezes super well!
Ingredients
- 1 Tb olive oil
- 1 yellow bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 1 Tb garlic, minced
- 3 C black beans, dried
- 12 C water
- 12 tsp beef bullion granules
- 1 1/2 Tb cumin
- 2 Tb oregano
- 1 tsp chili powder
- 1 1/2 T sugar
- 2 tsp Kinders Woodfire Smoked Garlic Seasoning (or taco seasoning)
- 1/2 tsp liquid smoke
- 2 tsp salt
- 1/2 tsp pepper
- TOPPINGS:
- avocado slices
- cheddar cheese
- sour cream
- tortilla chips
- lime juice
- cilantro
Instructions
- Turn your instant pot to the sauté setting. When it is warm, add the olive oil and allow it to heat through. Add the bell peppers, and onion and cook, stirring occasionally until the onions are translucent. Add the garlic and cook for an additional 2 minutes.
- Add all the other ingredients and give it a nice stir.
- Close the lid and set it to high pressure. Set the timer for 60 minutes.
- When the cooking time has passed, you can release the pressure manually or let it release naturally.
- Give it a stir and a taste. Add more salt and pepper to your liking.
- Serve in soup bowls with the toppings of your choosing. It also works great to serve over this Cilantro Lime Rice.
