This bright and festive Spring Vegetable Tray is packed with fresh, crunchy veggies and features adorable stuffed mini peppers that look like little carrots! These creamy, flavorful bites are not only delicious but also add a fun, seasonal touch—perfect for Easter, baby showers, or spring gatherings.

Let me show you how to make it happen!

Grab your orange and yellow mini peppers. Cut them in half and then carefully cut a triangle into the top. This will remove the seeds and the stem and leave you a spot to put the parsley (carrot top). Cut the parsley stems down, leaving about an inch per piece. Lay the parsley stem into the center of the pepper.

Grab some Whipped Cream Cheese (I used Chive flavored, but any savory flavor will work). Spread some into each of the peppers. Sprinkle with a bit of Everything Bagel Seasoning.

Hummus and Greek Seasoning is also super yummy.

Arrange them on a tray with other fresh veggies.

Ingredients

Instructions
