This yummy Coconut Flavor can be found at Amazon. It’s optional, and you can replace it with Coconut Extract (found at the grocery store), but it really does enhance the coconut flavor.
Ingredients
- 1 (15 oz) can of Coco Lopez Cream of Coconut
- 1 (8 oz) Cool Whip, thawed
- 1 (8 oz) cream cheese, room temperature
- 2-3 drops Coconut Oil (see picture above), optional or 1 tsp Coconut Extract
Instructions
- Grab your can of Coco Lopez Cream of Coconut. Before you open it, run it under warm water for a few minutes. It will mix better if it's slightly warm.
- Open up the can and pour it into a medium sized mixing bowl, or into your stand mixer.
- Add the cream cheese and beat it well.
- Add the cool whip and coconut oil (or extract) and beat until smooth.
- Cover and refrigerate for at least 1 hour and up to 24.
Serve as a crepe filling, or as a delicious fruit dip. It's especially good with bananas and strawberries.
