Lemon Parmesan Roasted Asparagus

There’s something magical that happens to vegetables when they get roasted at a high temperature for a short time, in the oven. It enhances their flavor and texture tremendously. Add a a bit of fresh lemon, salt and pepper and parmesan cheese to roasted asparagus and you have one tasty side dish, everyone. So fresh! So wonderful.
Also, they are ready to serve in 10 minutes. 🙂 That’s something to be happy about, right there.

Ingredients

  • 2 bunches of fresh asparagus (bottoms trimmed)
  • fresh lemon (about half of a medium sized fruit will do the trick)
  • salt and pepper
  • 1/4 C parmesan cheese, grated

Instructions

  1. Heat your oven up to 450 degrees.
  2.  Trim the bottom edge of each stalk of asparagus.
  3. Line 2 large baking sheets with foil and spray them generously with cooking spray.
  4. Add your asparagus out evenly over the sheets. Spray them generously with cooking spray (no need to add oil).
  5. Roast for 5-10 minutes, or until they have a slight char on them.
  6. Remove the pans from the oven, squeeze the lemon juice over top and toss with salt, pepper and parmesan cheese.
  7. Serve immediately and enjoy!

This is the ONLY way I can eat asparagus, and the only way I ever want to! It's that good!! Now I feel the need to run to Kroger after work and make this for dinner!:)

Thanks for posting this. My girls love asparagas, but my son doesn't so I keep trying it different ways to see if he can find one he *likes*. Thanks!

Roasting really is the best way for most things! We make this recipe a lot except I usually sprinkle some feta cheese on top instead of the parm. Very yummy.

I had never tried asparagus until about a year ago. My aunt had steamed some and it was really good. But this is the way I always make it. Delicious, quick and easy. And I bought some this week for 88cents a pound!

I have yet to find a way that I don’t like asparagus. But roasted is one of my favorite. Creamed like peas is also wonderful…. saute in butter, oh my.
