Super easy to prepare, hearty and satisfying, this basic and delicious Egg Salad Sandwich recipe is a must make!

We like to make our hard boiled eggs in the instant pot. You can see a tutorial on HARD BOILED EGGS in the INSTANT POT by clicking HERE.

This recipe is the perfect amount to make one hearty sandwich, but you can certainly double or triple the recipe as needed. You can even make the egg salad ahead of time, but be sure to wait to assemble your sandwich until you are ready to serve.

We like to use Homemade Sour Dough Bread (something I’ve been practicing and experimenting with over the past year, watch for a post coming soon). Layer bread, lettuce, egg salad, lettuce and more bread.

Egg Salad Sandwich

Ingredients

  • 3 hard boiled eggs
  • 2 Tb mayonnaise
  • 1 Tb Miracle Whip salad dressing
  • 1 tsp sweet pickle relish
  • salt and pepper
  • dash smoked paprika
  • 2 sliced bread of your choosing
  • 2 lettuce leaves

Instructions

  1. Grab a small mixing bowl. Add the hard boiled eggs, mayo, miracle whip, relish, salt, pepper and smoked paprika. Use a fork to smash the eggs into small pieces, then a spoon to stir it all around and incorporate. Give it a taste and add more salt and pepper if needed.
  2. Layer one slice of bread, a lettuce leaf, the egg salad, another lettuce leaf and top with the second piece of bread.

Serve immediately and enjoy!

Notes

You can make the salad up to 24 hours in advance, store in the refrigerator. Assemble your sandwich when you are ready to serve.
