Chewy Double Chocolate Cookies Jamie Cooks It Up!

A cookie, warm from the oven…all gooey and wonderful…well, that’s my kind of heaven I can tell you that. Just look at that chewy chocolate delight. Delish! These cookies are sweet, fudgy and have an amazing texture. They are loaded with both milk and white chocolate chips and are kind of like eating a brownie, but in a cookie form.

Chewy Double Chocolate Cookies

Total Time: 1 hour

Yield: 48 cookies

Ingredients

1 C butter, softened
1 C white sugar
1 C dark brown sugar, packed
2 tsp vanilla
2 eggs
2 1/4 C flour
1 tsp soda
3/4 C cocoa powder
1 tsp salt
3 C milk chocolate chips
1 C white chocolate chips

Instructions

1. Preheat your oven to 350 degrees.
2. Into your stand mixer or large mixing bowl place the softened butter, white sugar and dark brown sugar. Beat on medium speed until the mixture is well combined (about 2 minutes).
3. Add the eggs and beat for an additional 1 minute. Add the vanilla and beat just until it's mixed in.
4. In a separate bowl combine the flour, soda, cocoa and salt. Add it to the creamed mixture and mix until combined.
5. Add the milk chocolate and white chocolate chips. Mix just until combined.
6. Bake for 7-8 minutes, or just until the tops of the cookies are cracked. You want to be sure not to over bake here. The cookies will be super soft and chewy if they are underbaked just a bit. Remove the pans from the oven and allow them to continue cooking on the hot cookie sheet for 1-2 minutes. Remove to a wire rack to cool completely.

These look delicious! Just to verify before I make them today.. It says 1 cup of brown sugar and then 1 cup of dark brown sugar packed. Is the first cup supposed to be granulated sugar?

Is the second ingredient white sugar or brown sugar?

Baking 48 cookies would far to many for me at one time. Is it possible to bake half and freeze the other half to bake later?

Donna,
The baked cookies will freeze well. However, you can also freeze the dough and then bake them when you are ready.

YUMMY goodness! This recipe also requires lots of ice cold milk to go with these cookies. Next time I will add some instant coffee and see how that tastes.

Another winner! I made these cookies today and we can’t stop eating them. I accidentally used light brown sugar instead of dark brown but they turned out delectable anyway. Next time I’ll try to do it right. But thanks for sharing Jamie, these are wonderful.
