Happy Friday, everyone and welcome to a weekly Menu Plan featuring all-simple, all-healthy recipes. Over the past year and a half my family and I have been working on eating cleaner and more simply. It has been a blessing for sure. All of these recipes are very easy to prepare and full of fabulous, healthy ingredients. Hope you enjoy them!

I also came across this amazing poem earlier this week and wanted to share it with you. Think of it as Food for your Soul ;). I feel like January sometimes gets bogged down with lofty goals and unreasonable expectations. (ie…”I will run 5 miles 6 days a week” or “I will never speak out of anger to my children” or even better…”I will be cheerful and pleasant all of time”. Who could ever do that, right? ALLLLL of the time? I’m not sure I’ll ever get there. Ha!

It feels better to me to just focus on this day with all of it’s joys and challenges, than to set myself up for an anxiety attack by thinking too much about what I might be able to accomplish this year. This poem captured my thoughts exactly.


Beautifully written, right? I snapped the photograph behind the text on a gorgeous fall walk I took with my family several months back. A great reminder to me on this chilly January day… that all of life is not winter.
