I’ve got a tasty new recipe for you all today. These fabulous Citrus and Herb infused Skillet Pork Chops are super fast and easy to prepare. They turn out tender and juicy, every time, my friends and come together in less than 15 minutes. They are also super healthy. So much to love, here!

Citrus and Herb Pork Chops

Ingredients

  • 2/3 C freshly sqeezed orange juice (about 2 large oranges)
  • 1 tsp deli mustard
  • 1/2 tsp thyme, dried
  • 1 tsp parsley, dried
  • 1/2 C water
  • 1 tsp bullion
  • 1 1/2-2 pounds rib eye pork chops, boneless
  • 1 Tb olive oil (optional)
  • salt and pepper

Instructions

  1. Into a glass measuring cup, squeeze the orange juice until you have 2/3 C.
  2. Add the mustard, thyme, parsley, water and bullion. Stir well to combine and set aside.
  3. Heat a large deep skillet up over medium high heat. I usually just spray the pan generously with cooking spray, but you can add 1 Tb olive oil if you choose.
  4. Sprinkle your pork chops with salt and pepper. Place them with the seasoned side down into your hot skillet. Sprinkle the tops with salt and pepper.
  5. Allow them to sear along the bottom until they get a nice golden brown color.
  6. Turn them over and allow them to sear on that side as well.
  7. Pour the liquid over the chop and cover, allowing the liquid to bubble up and simmer. Cook for about 3 minutes.
  8. Remove the lid and continue to cook until most of the liquid has evaporated.
  9. Remove from the heat and cover for 5 minutes.
  10. Serve and enjoy!

 

Notes

These are fantastic with Roasted Butternut Squash and Roasted Potatoes or Quinoa.

They freeze well measured out into individual portions with a veggie and grain, similar to the example above. These portioned out meals have been a life saver for me on busy days when there’s not time to cook, but I need some great healthy food.
