I have a fantastic salad recipe for you all today. I’m in love with good Cobb Salad and realized recently, that I haven’t ever posted one here. So, I thought I’d bring one along to share with you all.

It’s loaded with chopped iceburg lettuce,

sliced tomatoes, blue cheese crumbles…

crispy bacon, rotisserie chicken…

…hard boiled eggs (instant pot instructions HERE) and sliced avocado.

Simple, but so, so good. These are the two dressing that I usually use with it. You could also include a Balsamic Glaze as well.

I’ve been enjoying this yummy salad it on replay this summer. It makes a great, light meal. I purchase precooked bacon and always do the Hard Boiled Eggs in the Instant Pot which is a huge time saver. Hope some of you get a chance to try it!

Ingredients

  • 1 head ice burg lettuce, chopped
  • 2 C sliced tomatoes
  • 6 hard boiled eggs (made in the instant pot)
  • 10 slices bacon, chopped (I usually buy precooked)
  • 1/2 C blue cheese crumbles
  • 1-2 C rotisserie chicken
  • 2 avocados, sliced
  • Ranch or Blue Cheese Dressing

Instructions

  1. Grab your instant pot and make the hard boiled eggs. Tutorial found HERE. Peel and slice them into quarters.
  2. Slice your tomatoes, chop your bacon and rotisserie chicken and slice up the avocado.
  3. Chop your lettuce and lay it out evenly on a platter.
  4. Add all the other ingredients, except the dressing. Allow people to dress their own salads, just before serving.
  5. Serve and enjoy!

Notes

I typically make a big platter of salad at a time for my family, but you could easily make individual salads as well.
